My dad is a huge fan of lemon bars (I can't stand them), so lemon bars seemed an easy choice for me since he and everyone else would appreciate them and I wouldn't eat them before they got to his house!&lt;br /&gt;&lt;br /&gt;I rarely follow recipes to the T because I like taking some credit for creating something awesome. This time, I concocted a cream cheese mixture, which made all the difference. Each time I bake, I taste it to see how I can improve and make it perfect the next time I make it. This time, I decided to taste from the middle of the bars because I figured I could replace the small piece with a centerpiece strawberry (my favorite garnish). It was so amazing, that wouldn't you know it, I ate an entire whole in the middle of the lemon bars I supposedly made for my family.&lt;br /&gt;&lt;img id="BLOGGER_PHOTO_ID_5324429127949051074" style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 403px; CURSOR: hand; HEIGHT: 289px; TEXT-ALIGN: center" alt="" src="http://4.bp.blogspot.com/_pJTffzUXe8c/SeQsFPMlZMI/AAAAAAAAABA/7H6646n4V2w/s320/Kate%27s+camera+003.jpg" border="0" /&gt;&lt;br /&gt;&lt;br /&gt;My guy walked into the kitchen just in time to catch me putting the last piece of fruit in the center of the masterpiece to hide what I'd done.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;img id="BLOGGER_PHOTO_ID_5324429504808156546" style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 444px; CURSOR: hand; HEIGHT: 312px; TEXT-ALIGN: center" alt="" src="http://1.bp.blogspot.com/_pJTffzUXe8c/SeQsbLGy_YI/AAAAAAAAABI/Gyf6rBVanhc/s320/Kate%27s+camera+007.jpg" border="0" /&gt;&lt;br /&gt;When he saw the pictures, he didn't even judge but he did get a good laugh out of it with me at how pathetic it seemed. They were that good.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;For the crust, you'll need the following:&lt;br /&gt;&lt;br /&gt;1 cup of butter&lt;br /&gt;2 cups all purpose flour&lt;br /&gt;1/2 cup powdered sugar&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Mix the above ingredients and put in a greased 9x13 pan. Bake @ 350 for 20 mins and cool.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;For the filling, you'll need the following:&lt;br /&gt;4 eggs, beaten&lt;br /&gt;6 tbsp lemon juice&lt;br /&gt;2 cups granulated sugar&lt;br /&gt;4 tbsp all purpose flour&lt;br /&gt;1 tsp baking power&lt;br /&gt;1/4 tsp salt&lt;br /&gt;1 tsp vanilla&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Mix all ingredients together. Set aside.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;For the cream cheese mixture, you'll need the following:&lt;br /&gt;&lt;br /&gt;1/2 cup cream cheese&lt;br /&gt;1/4 cup granulated sugar&lt;br /&gt;3 tbsp milk&lt;br /&gt;1 egg&lt;br /&gt;&lt;br /&gt;Beat these ingredients together with a mixer until fluffy. Then combine with the rest of the filling. Pour over cooled crust and bake at 350 for 30 mins. Sprinkle with powdered sugar.
