Kate's Ridiculously Goodlooking Cream cheese lemon bars

Last weekend was Easter and I decided to make something delicious for my family. My dad is a huge fan of lemon bars (I can't stand them), so lemon bars seemed an easy choice for me since he and everyone else would appreciate them and I wouldn't eat them before they got to his house!

I rarely follow recipes to the T because I like taking some credit for creating something awesome. This time, I concocted a cream cheese mixture, which made all the difference. Each time I bake, I taste it to see how I can improve and make it perfect the next time I make it. This time, I decided to taste from the middle of the bars because I figured I could replace the small piece with a centerpiece strawberry (my favorite garnish). It was so amazing, that wouldn't you know it, I ate an entire whole in the middle of the lemon bars I supposedly made for my family.


My guy walked into the kitchen just in time to catch me putting the last piece of fruit in the center of the masterpiece to hide what I'd done.





When he saw the pictures, he didn't even judge but he did get a good laugh out of it with me at how pathetic it seemed. They were that good.


For the crust, you'll need the following:

1 cup of butter
2 cups all purpose flour
1/2 cup powdered sugar


Mix the above ingredients and put in a greased 9x13 pan. Bake @ 350 for 20 mins and cool.


For the filling, you'll need the following:
4 eggs, beaten
6 tbsp lemon juice
2 cups granulated sugar
4 tbsp all purpose flour
1 tsp baking power
1/4 tsp salt
1 tsp vanilla


Mix all ingredients together. Set aside.


For the cream cheese mixture, you'll need the following:

1/2 cup cream cheese
1/4 cup granulated sugar
3 tbsp milk
1 egg

Beat these ingredients together with a mixer until fluffy. Then combine with the rest of the filling. Pour over cooled crust and bake at 350 for 30 mins. Sprinkle with powdered sugar. Then garnish with strawberries, blackberries or anything that hides the evidence after you've eaten the middle...


Makes 24 bars
